Spinach & Goat Cheese Frittata

This gluten free egg recipe is so simple and so comforting with spinach and goat cheese.

I make this frittata for every Christmas breakfast, because it is so tasty but it takes no time at all! Just whisk the eggs and milk or cream together, add in into the spinach pan and throw it in the oven. Done! 

It’s also great that it doesn’t have a shell or crust, so it is gluten free and a little lighter. This is important for a brunch or Christmas morning, when there are so many other heavier things on the table. 

Preheat the oven and begin sautéing the spinach and green onions in an oven proof pan. While that cooks, whisk the eggs, salt and pepper, and either milk or half and half together. This year we only had heavy cream available, and that worked just as well. 

Pour the eggs into the spinach pan and stir. Add crumbled goat cheese because YUM, and stick the whole pan in the oven. Cook until the eggs are no longer jiggly in the middle, about 15 minutes.

When I cooked this last week, the outside began to brown before the middle. I turned the oven onto broil for one more minute and this set the eggs in the middle just right.

I don’t have any other photos of this frittata, because it went like hot cakes! This was my piece leftover the next morning, and it’s almost better the next day. This is a great brunch idea because it looks fancy but takes no time!

I also made this make-ahead punch with pomegranate juice, orange juice, and champagne for brunch. It was a perfect breakfast cocktail! Enjoy!

Ingredients
  

  • 10 large eggs
  • ¼ cup milk or half and half
  • 1 tbsp olive oil
  • 5 ounces (small bag) spinach
  • 3-4 green onions, light green and dark green parts, chopped. Reserve some for garnish
  • 4 ounces goat cheese
  • salt and pepper

Instructions
 

  • Heat oven to 425°F.
  • Whisk eggs in a large bowl and add milk or half and half.
  • In medium cast iron or oven-proof skillet, sauté spinach and green onions in oil until spinach begins to wilt, about 3 minutes.
  • Remove from heat and pour egg mixture into skillet. Add salt and pepper, and crumbled goat cheese.
  • Place in oven and cook about 15 minutes, until eggs are set in the middle and are not jiggly.
  • Remove from oven and top with reserved chopped green onions. Serve hot. Enjoy!
