A simple St. Patrick's Day cocktail recipe
It’s March! Spring is around the corner, and that means St. Paddy’s Day is close! I love this holiday, not only because I’m part Irish (Erin actually means “Ireland”!) but also because it is such a joyful time of year. Say goodbye to winter and jeans and sweaters and hello to sandals and shorts.

ToggleThis drink is perfect for spring, with the melon liquor and pineapple juice. It is also a great St. Patrick’s Day cocktail because of that gorgeous green color!
The recipe is super simple. Add vodka, Midori or melon liquor, and triple sec to a mason jar or cocktail shaker. Really any orange liquor like Cointreau would work as well. Top off with pineapple juice and ice, and shake well.
Strain and serve in a martini glass. I love these unbreakable glasses for by the pool! Garnish with a pineapple slice to drive home that pineapple flavor. Yay for Spring!
If you really want to sound Irish, just toast with “Sláinte!” before you drink your green cocktail. Pronounced “slawn-che”, it means “health” in Irish and Scottish Gaelic. I think we could all use a toast to health right now!
