Instant Pot Cuban Picadillo

This super quick Cuban ground beef recipe is filled with flavor from the garlic, tomatoes, fresh cilantro, and added saltiness from the green olives

- 1 1/2 pounds ground beef
- 1 tsp coarse salt
- ½ tsp ground black pepper
- ½ large onion, chopped
- 2 tsp garlic
- ½ large red bell pepper, chopped
- 1 medium tomato, chopped
- 4 ounce can tomato sauce
- 1 tsp cumin
- 1 bay leaf
- 1 tbsp chopped cilantro, plus more for serving
- 10 green olives, halved
- 2 tbsp olive juice from the jar
- 1 lime and avocado, sliced for garnish
Brown the ground beef using the sauté function in the Instant Pot. Salt and pepper the beef while it cooks.
Add onions and garlic once the beef is cooked and sauté a few more minutes.
Add in tomato, red bell pepper, bay leaf, and cumin. Stir well and turn off sauté function.
Add in can of tomato sauce plus half a can filled with water. Add in fresh cilantro, olives and olive juice. Stir and seal lid.
Cook for 15 minutes on high pressure. Allow to naturally release for 5 minutes and then open the seal for a quick release.
Garnish with avocado slices, lime slices and fresh cilantro. Serve alone or with white rice or cilantro cauliflower rice. Enjoy!
